RECIPES

GRAIN-FREE GRANOLA
•2 cups of mixed nuts
•1/2 cup of pumpkin seeds
•1/2 cup of coconut chips
•1/4 cup of honey
•2 Tbsp of coconut oil
•1 tsp of vanilla extract
•pinch of salt

Place all of the ingredients in a food processor and pulse until you’ve reached a chunky mixture. Spread mixture out on a baking sheet with parchment paper. Bake for 25 minutes at 275F°. Take out and allow the granola to cool down for 20 minutes. (That’s when it will get crunchy)

SWEET POTATO STUFFED BOLOGNESE
•2 sweet potatoes
•454 g of ground beef
•1 carrot
•2 stalks of celery
•4 mushrooms
•1/2 yellow onion
•2 cloves of garlic
•3/4 cup of tomato paste
•3/4 cup of canned coconut milk
•salt & pepper

Preheat the oven to 400°F. Scrub the sweet potatoes then cut them in half lengthwise and poke a few holes in them with a fork. Place the 4 sweet potato halves in a baking dish a roast for 60 minutes. Place a pan on medium heat and add the ground beef. While the beef is cooking wash and peel the carrot then use a cheese grater to shred it. Next wash the celery and mushrooms, finely chop them along with the yellow onion and garlic cloves. Once the beef is done, add in all of the vegetables to the pan and cover. Once the vegetables have been in there for 7-8 minutes, combine the tomato paste and coconut milk and whisk into a sauce then add it to the pan. Mix everything together then add the salt and pepper. Cook for an extra 5 minutes. Serve the bolognese stuffed in a sweet potato half.

HEALTHY TWIX BARS
Layer #1
•2 cups almond flour
•2 tbsp of coconut flour
•1/3 cup melted coconut oil
•1/3 cup of maple syrup
•1 tsp of vanilla extract
Layer #2
•1/4 cup of @bendbeauty Marine Collagen + CoFactors
•1/2 cup almond butter
•1/3 cup of coconut oil
•1/3 cup pure maple syrup
•1 tsp of vanilla exact
•Pinch of salt
Layer #3
1/2 cup of melted chocolate chips

Mix everything together, place in a square pan with parchment paper, and bake in the oven at 350F for 12 minutes. Combine everything well and pour over the first layer once it’s baked. Place in the freezer for 30 minutes. Pour over layer #2 once it has solidified, spread evenly, and place in the freezer again for 30 minutes.
